My Version...from Memory

 

On one of my previous visits to California, I had a lobster salad for lunch one day that has stayed in my memory ever since.  As you can see, it was full of large chunks of lobster meat, lots of cool butter lettuce, tomatoes and pieces of corn cut from the cob.  I've tried to find a similar salad locally ever since with no luck at all.  In fact, I actually complained at one local restaurant when they served me giant bowl of iceberg lettuce that I had to dig around in to find the lobster meat.  (I'm not normally a complaining customer but really what they served should never have been billed as a lobster salad.)

I decided to try making my own version.  Mine had the same tender butter lettuce, lots of lobster meat a few more tomatoes and I added avocado instead of the corn.  It was delicious.  Now I can quit my search for that memorable salad and make my own whenever I want one.

Both salads look wonderful. Would not refuse either. Especially like yours with the avocado (a personal favorite of mine)

It looks good. And what type of salad dressing did you use?
